Our bees collect the honey for our Creamed Clover Honey from the paddocks along the South Coast of New Zealand, right beside Fiordland National Park. When we get a good summer in Southland it's great for our bees as they love the nectar of clover flowers and they make the most out of it, working all over the paddocks, pollinating the plants as they work them. Clover honey is light in taste and colour, very delicate and a little fruity in flavour. Awesome on toast, or use it on your cereal, in your drinks or for cooking or baking, it gives a lovely touch to it. To get the nice creamy texture in the honey it gets filtered twice, then stirred with a fine grain rata honey starter for five days to stop it setting hard, nothing gets added, naturally and healthy.
